It has been surprisingly cold and rainy this winter in Los Angeles. I woke up one morning with a craving for some warm fluffy pancakes. I came across several vegan recipes, but decided to make a few changes and create my own. If you are a fan of simple fluffy pancakes I think you will enjoy these. The best part… they are compassionate pancakes because they are vegan.

Ingredients
- 2 cups of flour (I use all purpose flour )
- 3 tablespoons of baking powder
- 1-2 tablespoons of sugar
- 1 tablespoon of apple cider vinegar or lemon juice (this creates a simple buttermilk when added to your choice of plant milk, I used lemon juice)
- 1 1/2 cups of plant milk (I use unsweetened vanilla almond)
- Pinch of salt
- Toppings: I used chopped up toasted unsalted almonds, vegan butter, and organic maple syrup.
Recipe
First add your choice of apple cider vinegar or lemon juice to your plant milk, set aside for 3-5 minutes. In a bowl, add all of your dry ingredients and mix well. Then whisk in your plant milk. I add some vegan butter to the pan, and cook the pancakes on a medium low heat until they are golden brown. Add your toppings of choice and enjoy with a hot cup of coffee. Yum.
